Ingredients

  • 2 ears corn, husked
  • ¼ lb nitrate-free smoked sausage, cut into ½-inch pieces
  • 4 small organic red potatoes
  • ½ sweet onion, quartered
  • 1 lemon, halved
  • 2 cups water
  • 1 Tbsp Old Bay seasoning
  • 1 bay leaf
  • ½ lb unpeeled, large raw shrimp (see Note)

Instructions

  1. Break each ear of corn in half. Combine sausage, potatoes, corn, onion, lemon, and water in a large Dutch oven. Stir in Old Bay seasoning and bay leaf.
  2. Bring to a boil. Reduce heat, and simmer 10 minutes or until corn and potatoes are tender.
  3. Add shrimp; cook 2 to 3 minutes or until shrimp turn pink. Drain and serve on a large platter. Discard bay leaf.
