BLT Breakfast Sandwiches with Basil Mayo

Ingredients
- 4 slices center cut bacon
- 4 large eggs, lightly beaten
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 tsp vegetable oil
- ⅓ cup reduced-fat mayonnaise
- 3 Tbsp chopped fresh basil
- 2 tsp fresh lemon juice
- 8 (1-oz) slices whole wheat sandwich bread, toasted
- 4 butter lettuce leaves
- 2 tomatoes, sliced
Instructions
- Microwave bacon on a paper towel-lined plate at HIGH 1½ to 2 minutes or until crisp.
- Meanwhile, whisk together eggs and ⅛ tsp each salt and pepper.
- Heat oil in a small nonstick skillet over low heat. Add eggs; cook 7 minutes or until set, stirring gently.
- Combine mayonnaise, basil, and lemon juice; spread over bread.
- Top 4 bread slices with lettuce, eggs, tomato, bacon, and ⅛ tsp each salt and pepper; top with remaining bread.
