BLT Breakfast Sandwiches with Basil Mayo

Ingredients

  • 4 slices center cut bacon
  • 4 large eggs, lightly beaten
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 tsp vegetable oil
  • ⅓ cup reduced-fat mayonnaise
  • 3 Tbsp chopped fresh basil
  • 2 tsp fresh lemon juice
  • 8 (1-oz) slices whole wheat sandwich bread, toasted
  • 4 butter lettuce leaves
  • 2 tomatoes, sliced

Instructions

  1. Microwave bacon on a paper towel-lined plate at HIGH 1½ to 2 minutes or until crisp.
  2. Meanwhile, whisk together eggs and ⅛ tsp each salt and pepper.
  3. Heat oil in a small nonstick skillet over low heat. Add eggs; cook 7 minutes or until set, stirring gently.
  4. Combine mayonnaise, basil, and lemon juice; spread over bread.
  5. Top 4 bread slices with lettuce, eggs, tomato, bacon, and ⅛ tsp each salt and pepper; top with remaining bread.
