Taco Bowls
Bibb Lettuce with Honey-Lime DressingIngredients
- 1 cup instant white rice
- ½ (10-oz) pkg frozen seasoning blend (chopped onion, bell pepper, and celery mix)
- 1½ tsp olive oil
- 1 Tbsp low-sodium taco seasoning mix
- 1 (15-oz) can low-sodium black beans, drained and rinsed
- ½ cup shredded Mexican-blend cheese
- ½ cup fresh salsa
- 1 avocado, sliced
Instructions
- Cook rice according to package directions.
- Meanwhile, cook seasoning blend in hot oil in a skillet over medium-high heat 6 to 8 minutes or until lightly browned.
- Stir in taco seasoning; cook 30 seconds. Add beans and rice; cook 3 minutes or until thoroughly heated.
- Sprinkle with cheese; let stand 5 minutes or until cheese is melted. Top with salsa and avocado.
Side Dish Ingredients
- 2 Tbsp lime juice
- 1 Tbsp olive oil
- 1½ tsp honey (or use agave nectar)
- ⅛ tsp salt
- 1 clove garlic, minced
- 1 head Bibb lettuce, torn
- 2 radishes, sliced
Side Dish Instructions
- Whisk together first 5 ingredients in a serving bowl. Add lettuce and radishes; toss.
