Bibb Lettuce with Honey-Lime Dressing

Ingredients

  • 1 cup instant white rice
  • ½ (10-oz) pkg frozen seasoning blend (chopped onion, bell pepper, and celery mix)
  • 1½ tsp olive oil
  • 1 Tbsp low-sodium taco seasoning mix
  • 1 (15-oz) can low-sodium black beans, drained and rinsed
  • ½ cup shredded Mexican-blend cheese
  • ½ cup fresh salsa
  • 1 avocado, sliced

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook seasoning blend in hot oil in a skillet over medium-high heat 6 to 8 minutes or until lightly browned.
  3. Stir in taco seasoning; cook 30 seconds. Add beans and rice; cook 3 minutes or until thoroughly heated.
  4. Sprinkle with cheese; let stand 5 minutes or until cheese is melted. Top with salsa and avocado.

Side Dish Ingredients

  • 2 Tbsp lime juice
  • 1 Tbsp olive oil
  • 1½ tsp honey (or use agave nectar)
  • ⅛ tsp salt
  • 1 clove garlic, minced
  • 1 head Bibb lettuce, torn
  • 2 radishes, sliced

Side Dish Instructions

  1. Whisk together first 5 ingredients in a serving bowl. Add lettuce and radishes; toss.
