Egg-and-Cheese Bagel Sandwiches
Pear, Blueberry, and Banana Toss
Ingredients
- 2 vegetarian everything bagels, split
- 4 large eggs
- 2 Tbsp milk
- 1 tsp olive oil
- 2 slices Cheddar cheese
- 1 avocado, sliced
- 1 Roma tomato, sliced
Instructions
- Preheat broiler. Place bagels, cut side up, on a rimmed baking sheet. Broil 1 minute or until golden brown.
- Whisk together eggs and milk in a bowl. Cook eggs in hot oil in a skillet over medium heat, without stirring, until eggs begin to set on bottom. Cook, stirring constantly, until thickened and set. If desired, season with salt and pepper to taste.
- Divide cheese among bagels. Top with eggs, avocado, and tomato; add bagel tops.

- ½ cup blueberries

- Gently toss together all ingredients in a serving bowl.
