Egg-and-Cheese Bagel Sandwiches

Ingredients

  • 2 vegetarian everything bagels, split
  • 4 large eggs
  • 2 Tbsp milk
  • 1 tsp olive oil
  • 2 slices Cheddar cheese
  • 1 avocado, sliced
  • 1 Roma tomato, sliced

Instructions

  1. Preheat broiler. Place bagels, cut side up, on a rimmed baking sheet. Broil 1 minute or until golden brown.
  2. Whisk together eggs and milk in a bowl. Cook eggs in hot oil in a skillet over medium heat, without stirring, until eggs begin to set on bottom. Cook, stirring constantly, until thickened and set. If desired, season with salt and pepper to taste.
  3. Divide cheese among bagels. Top with eggs, avocado, and tomato; add bagel tops.

  • 1 pear, cored and sliced
  • 1 banana, sliced
  • ½ cup blueberries

  1. Gently toss together all ingredients in a serving bowl.
