Asian Beef and Broccoli

Ingredients

  • 1½ lb broccoli crowns, cut into florets
  • 1½ lb flank steak, cut into 2-inch strips (or use London broil or sirloin steak)
  • 2 Tbsp olive oil, divided
  • 1 (8-oz) pkg sliced mushrooms
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • ½ cup low-sodium chicken broth
  • 1 Tbsp low-sodium soy sauce
  • 1 tsp cornstarch

Instructions

  1. Steam broccoli in a steamer basket over simmering water 5 minutes or until tender.
  2. Meanwhile, cook steak in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until browned. Remove steak, and keep warm.
  3. Add mushrooms, garlic, and ginger to skillet; sauté 2 minutes. Add steak, broccoli, and 1 Tbsp oil to skillet.
  4. Combine broth, soy sauce, and cornstarch in a small bowl. Add mixture to skillet; cook 1 to 2 minutes or until thickened, stirring often.

  1. Cook noodles according to package directions.
