BLT Chicken-Avocado Salad

Ingredients

  • 2 slices bacon
  • ½ (5-oz) pkg baby spinach-spring mix blend
  • 1 Roma tomato, cut into wedges
  • 3 Tbsp crumbled blue cheese
  • 3 Tbsp chopped pecans
  • ½ cup sliced or diced avocado
  • 1¼ cups shredded rotisserie chicken
  • ¼ cup balsamic vinaigrette

Instructions

  1. Cook bacon in a skillet 6 to 8 minutes or until crisp. Drain and cool. Crumble bacon.
  2. Arrange greens, tomato, cheese, nuts, avocado, bacon, and chicken on a platter. Drizzle with dressing.
