Bacon-Wrapped Barbecue Pork Tenderloin

Ingredients

  • 1 (18.4-oz) mesquite barbecue pork tenderloin
  • ¼ tsp pepper
  • 6 slices bacon

Instructions

  1. Preheat grill to medium-high heat. Season pork with pepper. Wrap bacon slices around pork, securing with wooden picks.
  2. Grill pork, covered, over medium heat 10 minutes per side or until bacon is cooked and a meat thermometer inserted reads 145°F. Cover loosely, and let stand 10 minutes. Remove wooden picks, and slice pork to serve.

Side Dish Ingredients

  • ¼ cup olive-oil mayonnaise
  • 2 Tbsp apple cider vinegar
  • 1½ Tbsp yellow mustard
  • ½ tsp kosher salt
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ½ (16-oz) pkg shredded coleslaw

Side Dish Instructions

  1. Whisk mayonnaise and next 5 ingredients in a bowl. Add coleslaw, and toss. Chill until ready to serve.
