Smoked Salmon Deviled Eggs
Raspberry-Orange TossIngredients
- 8 large eggs
- ⅓ cup mayonnaise
- 2 Tbsp chopped fresh dill (or use 1 to 2 tsp dried)
- 2 Tbsp capers, minced
- 1 Tbsp lemon juice
- ½ tsp pepper
- 1 (4-oz) pkg smoked salmon, minced
Instructions
- Place eggs in a single layer in a large saucepan; add water to cover. Bring to a boil. Remove from heat; let stand, covered, 15 minutes.
- Drain; run cold water over eggs. Peel eggs, and cut each egg in half lengthwise. .
- Remove yolks to a bowl. Add mayonnaise, dill, capers, lemon juice, and pepper to egg yolks; mash to blend, and stir in salmon.
- Fill egg white halves with yolk mixture. Chill until ready to serve.

- 1 orange
- 1½ cups raspberries
Side Dish Instructions
- Peel and section orange. Toss together raspberries and orange sections.
