Smoked Salmon Deviled Eggs

Ingredients

  • 8 large eggs
  • ⅓ cup mayonnaise
  • 2 Tbsp chopped fresh dill (or use 1 to 2 tsp dried)
  • 2 Tbsp capers, minced
  • 1 Tbsp lemon juice
  • ½ tsp pepper
  • 1 (4-oz) pkg smoked salmon, minced

Instructions

  1. Place eggs in a single layer in a large saucepan; add water to cover. Bring to a boil. Remove from heat; let stand, covered, 15 minutes.
  2. Drain; run cold water over eggs. Peel eggs, and cut each egg in half lengthwise. .
  3. Remove yolks to a bowl. Add mayonnaise, dill, capers, lemon juice, and pepper to egg yolks; mash to blend, and stir in salmon.
  4. Fill egg white halves with yolk mixture. Chill until ready to serve.

Side Dish Ingredients

  • 1 orange
  • 1½ cups raspberries

Side Dish Instructions

  1. Peel and section orange. Toss together raspberries and orange sections.
