Mexican Sausage and Eggs

Ingredients

  • 1 Tbsp olive oil
  • 4 large eggs
  • 4 cooked sausage patties (from Smoky Mexican Sausage Patties recipe)
  • 1 avocado, halved
  • 2 Tbsp lime juice
  • 1 Tbsp plain Greek yogurt
  • 1 large tomato, cut into 4 slices
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Heat oil in a large nonstick skillet over medium heat. Crack eggs into skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness; season with salt and pepper to taste.
  2. Meanwhile, heat sausages in microwave at HIGH 1 to 2 minutes or until thoroughly heated.
  3. Process avocado, lime juice, and yogurt in a blender or food processor, scraping sides as needed. Season avocado crema with salt and pepper to taste; stir in enough water to reach desired consistency.
  4. Divide sausages among 4 plates; top with tomato slices and eggs. Drizzle with avocado crema, and sprinkle with cilantro.
