Easy Huevos Rancheros
Ingredients
- 6 corn tortillas
- 3 Tbsp olive oil
- 6 large eggs
- ½ tsp salt
- ½ tsp pepper
- 1 (20.5-oz) can refried black beans
- 1 (16-oz) jar mild salsa
- 1 avocado, sliced
Instructions
- Cook tortillas in 1 Tbsp hot oil in a large cast-iron skillet on a campfire grate or camping stove over medium-high heat 3 minutes per side or until crisp. Remove from skillet and keep warm.
- Crack eggs into skillet. Reduce heat to medium (see Note) and cook 3 minutes or until whites are set and yolks are cooked to desired doneness; sprinkle with salt and pepper. Remove from skillet and keep warm.
- Add beans to skillet and cook, stirring occasionally, 3 minutes or until thoroughly heated. Spread beans over tortillas. Top with eggs, salsa, and avocado.
