Chicken Fajitas

Ingredients
- 2 lb chicken tenderloins
- ½ tsp salt
- 1 Tbsp fajita seasoning mix, divided
- 3 Tbsp olive oil, divided
- 1 (20-oz) pkg frozen pepper and onion blend
- 2 tomatoes, cut into wedges
- 2 Tbsp water
- ¼ cup chopped fresh cilantro
- 12 fajita-size flour tortillas, heated
- 1 (16-oz) jar mild salsa
- 2 limes, cut into wedges
Instructions
- Sprinkle chicken with salt and 1 tsp fajita seasoning. Cook in 1 Tbsp hot oil in a large cast-iron skillet over medium-high heat on a campfire grate or camping stove 3 minutes per side or until done. Remove from skillet, and keep warm.
- Sauté pepper blend, tomatoes, and 2 tsp fajita seasoning in 2 Tbsp hot oil in skillet 5 minutes or until tender.
- Return chicken to skillet with water; simmer until water is almost evaporated. Stir in cilantro. Serve chicken mixture in tortillas with salsa and lime wedges.
