Ingredients

  • 2 lb chicken tenderloins
  • ½ tsp salt
  • 1 Tbsp fajita seasoning mix, divided
  • 3 Tbsp olive oil, divided
  • 1 (20-oz) pkg frozen pepper and onion blend
  • 2 tomatoes, cut into wedges
  • 2 Tbsp water
  • ¼ cup chopped fresh cilantro
  • 12 fajita-size flour tortillas, heated
  • 1 (16-oz) jar mild salsa
  • 2 limes, cut into wedges

Instructions

  1. Sprinkle chicken with salt and 1 tsp fajita seasoning. Cook in 1 Tbsp hot oil in a large cast-iron skillet over medium-high heat on a campfire grate or camping stove 3 minutes per side or until done. Remove from skillet, and keep warm.
  2. Sauté pepper blend, tomatoes, and 2 tsp fajita seasoning in 2 Tbsp hot oil in skillet 5 minutes or until tender.
  3. Return chicken to skillet with water; simmer until water is almost evaporated. Stir in cilantro. Serve chicken mixture in tortillas with salsa and lime wedges.
