Ingredients

  • ½ (14-oz) pkg frozen popcorn shrimp
  • 2 everything bagels, split
  • 2 avocados
  • 1 Tbsp lemon juice
  • 1 cup cherry tomatoes, halved
  • ½ (6.76-oz) bottle balsamic glaze

Instructions

  1. Bake shrimp according to package directions.
  2. Meanwhile, toast bagels until browned and crisp.
  3. Mash avocados with lemon juice in a bowl; season lightly with salt and pepper. Spread avocado on bagels. Top with tomatoes and shrimp; drizzle with glaze.

Side Dish Ingredients

  • 1 romaine lettuce heart, torn
  • ½ (3.4-oz) pkg baked crunchy apple chips, broken into large pieces
  • ¼ cup shredded Parmesan cheese
  • ¼ cup balsamic vinaigrette
