Everything Bagel Avocado and Shrimp Toast
Romaine and Apple Chip Salad
Ingredients
- ½ (14-oz) pkg frozen popcorn shrimp
- 2 everything bagels, split
- 2 avocados
- 1 Tbsp lemon juice
- 1 cup cherry tomatoes, halved
- ½ (6.76-oz) bottle balsamic glaze
Instructions
- Bake shrimp according to package directions.
- Meanwhile, toast bagels until browned and crisp.
- Mash avocados with lemon juice in a bowl; season lightly with salt and pepper. Spread avocado on bagels. Top with tomatoes and shrimp; drizzle with glaze.
Side Dish Ingredients
- 1 romaine lettuce heart, torn
- ½ (3.4-oz) pkg baked crunchy apple chips, broken into large pieces
- ¼ cup shredded Parmesan cheese
- ¼ cup balsamic vinaigrette
