Lemon-Salmon and Asparagus Pappardelle

Ingredients

  • 1 lemon
  • 1 Tbsp olive oil
  • 1 (1-lb) salmon fillet
  • 1½ tsp garlic salt
  • 1½ tsp pepper
  • 1 (16 to 17.6-oz) pkg pappardelle pasta 
  • 1 lb asparagus, cut into 1-inch pieces
  • 1 (6.5-oz) pkg spreadable garlic and herb cheese
  • ½ cup freshly shaved Parmesan cheese

Instructions

  1. Preheat grill to medium-high. Grate zest and squeeze juice from lemon. Rub oil over fish; sprinkle with garlic salt and pepper. Grill 4 to 5 minutes per side or until fish flakes with a fork. Break fish into large pieces.
  2. Cook pasta according to package directions in a large pot or Dutch oven, adding asparagus during last 2 minutes of cooking. Drain, reserving ½ cup pasta water, and return to pot.
  3. Reduce heat to medium-low; stir in spreadable cheese, lemon zest, lemon juice, and enough pasta water to make a thin sauce; cook 2 minutes or until thoroughly heated. Toss fish with pasta just before serving; sprinkle with Parmesan.
