Italian Frittata
Simple Mixed GreensIngredients
- 1 (10-oz) pkg baby spinach, coarsely chopped
- 1 Tbsp olive oil
- 1 (14-oz) pkg plant-based sweet Italian sausage links, casings removed
- 2 cloves garlic, minced
- 1 cup freshly grated Parmesan cheese, divided
- 8 large eggs
- ¾ cup half-and-half
Instructions
- Preheat oven to 425°F. Cook spinach in hot oil in a large skillet over medium heat 2 minutes or until wilted. Set aside.
- Cook plant-based sausage and garlic in an ovenproof skillet over medium heat until browned and crumbly; drain. Return sausage to ovenproof skillet, spreading evenly on bottom.
- Sprinkle ½ cup cheese over sausage; top with spinach, and sprinkle with remaining ½ cup cheese.
- Whisk together eggs and half-and-half in a bowl. Pour egg mixture over cheese; cook over medium heat 4 minutes. Transfer skillet to oven.
- Bake 20 minutes or until golden brown and set. Let stand 15 minutes before cutting into wedges.

- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Toss together greens and vinaigrette in a large bowl.
