Grilled Coconut-Lime Fish Packets

Ingredients
- 2 zucchini, halved and sliced
- 3 cups corn kernels (see Note)
- 1 red onion, sliced
- 1 lime
- 1 (13.5-oz) can unsweetened coconut milk
- 3 Tbsp chopped fresh cilantro (or use parsley)
- 6 (6-oz) mahi mahi fillets
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat grill to medium-high heat. Cut 6 (15- x 20-inch) pieces of heavy-duty foil; divide zucchini, corn, and onion among foil pieces. Fold up one side of each to create a border.
- Grate zest and squeeze juice from lime. Combine lime zest, lime juice, coconut milk, and cilantro. Carefully pour over vegetables, making sure liquid doesn't escape packet.
- Top vegetable mixture with fish; sprinkle with salt and pepper. Fold up sides and seal to create airtight packets.
- Grill 15 minutes, turning once, until fish flakes with a fork.
