Grilled Coconut-Lime Fish Packets

Ingredients

  • 2 zucchini, halved and sliced
  • 3 cups corn kernels (see Note)
  • 1 red onion, sliced
  • 1 lime
  • 1 (13.5-oz) can unsweetened coconut milk
  • 3 Tbsp chopped fresh cilantro (or use parsley)
  • 6 (6-oz) mahi mahi fillets
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat grill to medium-high heat. Cut 6 (15- x 20-inch) pieces of heavy-duty foil; divide zucchini, corn, and onion among foil pieces. Fold up one side of each to create a border.
  2. Grate zest and squeeze juice from lime. Combine lime zest, lime juice, coconut milk, and cilantro. Carefully pour over vegetables, making sure liquid doesn't escape packet.
  3. Top vegetable mixture with fish; sprinkle with salt and pepper. Fold up sides and seal to create airtight packets.
  4. Grill 15 minutes, turning once, until fish flakes with a fork.
