Crispy Parmesan-Ranch Chicken
Broccoli and Herb-Butter Rice
Ingredients
- ¾ lb boneless, skinless chicken breasts
- ½ cup panko breadcrumbs
- ¼ cup freshly grated Parmesan cheese
- ½ (1-oz) envelope Ranch dressing mix
- 3 Tbsp olive oil, divided
Instructions
- Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Combine panko, cheese, and dressing mix in a shallow bowl. Brush chicken with 1 Tbsp oil; dredge in panko mixture, pressing gently to adhere.
- Cook chicken in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done.

- 1 (5.4-oz) pouch herb and butter rice (such as Knorr Rice Sides)
Side Dish Instructions
- Steam broccoli according to package directions; season with salt and pepper to taste.
- Prepare rice according to package directions.
