Crispy Parmesan-Ranch Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ½ cup panko breadcrumbs
  • ¼ cup freshly grated Parmesan cheese
  • ½ (1-oz) envelope Ranch dressing mix
  • 3 Tbsp olive oil, divided

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Combine panko, cheese, and dressing mix in a shallow bowl. Brush chicken with 1 Tbsp oil; dredge in panko mixture, pressing gently to adhere.
  3. Cook chicken in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 5 to 6 minutes per side or until done.

  • 1 (12-oz) pkg broccoli florets
  • 1 (5.4-oz) pouch herb and butter rice (such as Knorr Rice Sides)

Side Dish Instructions

  1. Steam broccoli according to package directions; season with salt and pepper to taste.
  2. Prepare rice according to package directions.
