Sloppy Joe Meatball Subs

Ingredients

  • ¾ lb ground beef
  • ½ cup Italian-seasoned panko
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1 (15-oz) can sloppy joe sauce
  • 2 hot dog buns
  • 2 slices provolone cheese
  • 2 Tbsp grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Stir together beef, panko, eggs, and Italian seasoning; season lightly with salt and pepper. Shape mixture into 1½-inch meatballs.
  2. Place on a lightly greased rack set over a rimmed baking sheet; bake 20 minutes.
  3. Place meatballs in a skillet; add sloppy joe sauce, and cook over medium heat 10 minutes or until sauce is hot and meatballs are done.
  4. Line buns with cheese slices. Spoon saucy meatballs over cheese. Sprinkle with grated Parmesan.
