Fried Tofu (Agedashi Tofu)

Ingredients

  • 1 (14-oz) block medium tofu, drained
  • ¼ cup cornstarch
  • ½ cup vegetable oil
  • 1 cup fish stock (or use Dashi)
  • 2 Tbsp mirin
  • 2 Tbsp soy sauce
  • 1 Daikon radish, grated
  • 4 green onions, thinly sliced

Instructions

  1. Press tofu between layers of paper towels to remove excess liquid. Cut into 1-inch-thick slices. Cut slices in half crosswise. Dredge tofu in cornstarch, gently shaking off excess.
  2. Fry coated tofu, in hot oil over medium-high heat until tofu is golden brown on all sides. Drain on a wire rack set over paper towels.
  3. Meanwhile, bring fish stock, mirin, and soy sauce to a boil in a saucepan; reduce heat, and simmer 5 minutes. Remove from heat.
  4. Place crispy tofu in shallow bowls; pour sauce around tofu. Garnish with grated radish and green onion.
