Fried Tofu (Agedashi Tofu)

Ingredients
- 1 (14-oz) block medium tofu, drained
- ¼ cup cornstarch
- ½ cup vegetable oil
- 1 cup fish stock (or use Dashi)
- 2 Tbsp mirin
- 2 Tbsp soy sauce
- 1 Daikon radish, grated
- 4 green onions, thinly sliced
Instructions
- Press tofu between layers of paper towels to remove excess liquid. Cut into 1-inch-thick slices. Cut slices in half crosswise. Dredge tofu in cornstarch, gently shaking off excess.
- Fry coated tofu, in hot oil over medium-high heat until tofu is golden brown on all sides. Drain on a wire rack set over paper towels.
- Meanwhile, bring fish stock, mirin, and soy sauce to a boil in a saucepan; reduce heat, and simmer 5 minutes. Remove from heat.
- Place crispy tofu in shallow bowls; pour sauce around tofu. Garnish with grated radish and green onion.
