Grilled Yakitori

Ingredients

  • 2 lb boneless, skinless chicken thighs 
  • 8 green onions
  • 2 Tbsp toasted sesame oil
  • ½ cup soy sauce
  • ½ cup mirin
  • ¼ cup sake
  • ¼ cup water
  • 1 Tbsp brown sugar

Instructions

  1. Preheat grill or grill pan to medium-high heat. Cut chicken into 1-inch cubes. Cut green onions, into 1-inch pieces. Alternately skewer chicken and onion onto wooden skewers and brush with oil.
  2. Combine soy sauce, mirin, sake, water, and brown sugar in a saucepan; bring to a boil over medium-high heat; reduce heat and simmer 15 minutes or until thick and syrupy. Place 3 Tbsp mixture in a small bowl.
  3. Grill skewers, 5 to 6 minutes per side, brushing occasionally with 3 Tbsp sauce mixture, until chicken is done. Serve with remaining sauce mixture.
