Sausage-Scrambled Egg Lettuce Wraps

Ingredients

  • 1 green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • ½ tsp pepper, divided
  • 1 Tbsp olive oil
  • ½ lb lean turkey breakfast sausage
  • 8 large eggs
  • 8 large romaine lettuce leaves
  • ½ cup fresh salsa

Instructions

  1. Cook bell pepper, onion, and ¼ tsp pepper in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until tender.
  2. Add sausage; cook 5 to 6 minutes or until browned, stirring to crumble.
  3. Whisk together eggs and ¼ tsp pepper. Add eggs to skillet, reduce heat to medium, and cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
  4. For each wrap, stack 2 leaves on a work surface. Fill lettuce with egg mixture; top with salsa. Roll up to serve.
