Sausage-Scrambled Egg Lettuce Wraps

Ingredients
- 1 green bell pepper, thinly sliced
- 1 small onion, thinly sliced
- ½ tsp pepper, divided
- 1 Tbsp olive oil
- ½ lb lean turkey breakfast sausage
- 8 large eggs
- 8 large romaine lettuce leaves
- ½ cup fresh salsa
Instructions
- Cook bell pepper, onion, and ¼ tsp pepper in hot oil in a large skillet over medium-high heat 4 to 5 minutes or until tender.
- Add sausage; cook 5 to 6 minutes or until browned, stirring to crumble.
- Whisk together eggs and ¼ tsp pepper. Add eggs to skillet, reduce heat to medium, and cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.
- For each wrap, stack 2 leaves on a work surface. Fill lettuce with egg mixture; top with salsa. Roll up to serve.
