Pineapple-Macadamia Nut Energy Bars

Ingredients

  • 1 cup macadamia nuts, coarsely chopped
  • ⅔ cup sunflower seeds
  • 3 Tbsp chia seeds
  • ½ cup chopped dried pineapple, divided
  • 2 Tbsp warm water
  • 2 Tbsp honey
  • 1 large egg white
  • ¾ tsp kosher salt

Instructions

  1. Preheat oven to 350°F.
  2. Spread nuts and sunflower seeds in a single layer on a rimmed baking sheet. Bake 10 minutes or until golden and fragrant, stirring occasionally. Cool slightly.
  3. Process nut mixture in a small food processor until coarsely chopped.
  4. Transfer to a large bowl; stir in chia seeds.
  5. Process ¼ cup pineapple, warm water, honey, egg white, and salt until smooth, scraping sides as needed.
  6. Add pineapple mixture and ¼ chopped pineapple to nut mixture; stir until blended.
  7. Coat an 8-inch square pan with cooking spray; spread nut-pineapple mixture into pan, pressing firmly into an even layer.
  8. Bake 20 to 25 minutes or until golden brown; let cool 15 minutes. Cut into 8 bars.
