Pineapple-Macadamia Nut Energy Bars

Ingredients
- 1 cup macadamia nuts, coarsely chopped
- ⅔ cup sunflower seeds
- 3 Tbsp chia seeds
- ½ cup chopped dried pineapple, divided
- 2 Tbsp warm water
- 2 Tbsp honey
- 1 large egg white
- ¾ tsp kosher salt
Instructions
- Preheat oven to 350°F.
- Spread nuts and sunflower seeds in a single layer on a rimmed baking sheet. Bake 10 minutes or until golden and fragrant, stirring occasionally. Cool slightly.
- Process nut mixture in a small food processor until coarsely chopped.
- Transfer to a large bowl; stir in chia seeds.
- Process ¼ cup pineapple, warm water, honey, egg white, and salt until smooth, scraping sides as needed.
- Add pineapple mixture and ¼ chopped pineapple to nut mixture; stir until blended.
- Coat an 8-inch square pan with cooking spray; spread nut-pineapple mixture into pan, pressing firmly into an even layer.
- Bake 20 to 25 minutes or until golden brown; let cool 15 minutes. Cut into 8 bars.
