Ham, Broccoli, and Cheese Quesadillas

Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 2 Tbsp water
  • ½ lb sliced low-sodium ham, chopped
  • 1⅓ cups shredded sharp Cheddar cheese
  • 4 soft taco-size low-carb flour tortillas
  • ¼ tsp crushed red pepper (optional)

Instructions

  1. Combine broccoli and water in a microwave-safe bowl; cover with plastic wrap, and vent one corner.
  2. Microwave at HIGH 3 minutes or until crisp-tender. Drain; cool slightly, and chop broccoli.
  3. Spread broccoli, ham, and cheese over half of each tortilla; sprinkle with red pepper, if desired. Fold each tortilla in half.
  4. Cook quesadillas, in batches, in a large nonstick skillet coated with cooking spray over medium heat 2 to 3 minutes per side or until browned. Cut into wedges.

Side Dish Ingredients

  • ½ English cucumber, thinly sliced
  • ¾ cup halved grape tomatoes
  • 1 Tbsp olive oil
  • 1 Tbsp apple cider vinegar

Side Dish Instructions

  1. Combine all ingredients in a large bowl.
