Ham, Broccoli, and Cheese Quesadillas
Cucumber and Tomato Toss
Ingredients
- 1 (12-oz) pkg broccoli florets
- 2 Tbsp water
- ½ lb sliced low-sodium ham, chopped
- 1⅓ cups shredded sharp Cheddar cheese
- 4 soft taco-size low-carb flour tortillas
- ¼ tsp crushed red pepper (optional)
Instructions
- Combine broccoli and water in a microwave-safe bowl; cover with plastic wrap, and vent one corner.
- Microwave at HIGH 3 minutes or until crisp-tender. Drain; cool slightly, and chop broccoli.
- Spread broccoli, ham, and cheese over half of each tortilla; sprinkle with red pepper, if desired. Fold each tortilla in half.
- Cook quesadillas, in batches, in a large nonstick skillet coated with cooking spray over medium heat 2 to 3 minutes per side or until browned. Cut into wedges.
Side Dish Ingredients
- ½ English cucumber, thinly sliced
- ¾ cup halved grape tomatoes
- 1 Tbsp olive oil
- 1 Tbsp apple cider vinegar
Side Dish Instructions
- Combine all ingredients in a large bowl.
