Grilled Teriyaki Salmon

Ingredients

  • 2 Tbsp gluten-free soy sauce
  • ½ Tbsp sesame oil
  • ½ Tbsp honey
  • 1 Tbsp minced garlic
  • ½ tsp ginger paste (or use ½ tsp ground ginger)
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 (6-oz) salmon fillets
  • ½ Tbsp olive oil

Instructions

  1. Combine soy sauce, sesame oil, honey, garlic, ginger, salt, and pepper in a shallow dish or zip-top plastic bag. Add fish; turn to coat. Chill 5 minutes.
  2. Preheat grill or grill pan to medium-high heat. Place fish on a grill rack coated with olive oil. Grill, covered, 6 to 10 minutes or until fish flakes with a fork, turning once.

Side Dish Ingredients

  • ½ (16-oz) pkg pineapple chunks
  • ½ (10-oz) pkg mango chunks
  • 1 small apple, chopped
  • 2 Tbsp chopped fresh mint
  • 1 tsp honey
  • ¼ tsp ginger paste (or use ⅛ tsp ground ginger)

Side Dish Instructions

  1. Combine pineapple, mango, apple, and mint in a bowl.
  2. Microwave honey in a small microwavable bowl at HIGH 10 to 20 seconds or until pourable. Add ginger; stir well. Drizzle over fruit; toss.
