Grilled Teriyaki Salmon
Ginger Fruit Salad
Ingredients
- 2 Tbsp gluten-free soy sauce
- ½ Tbsp sesame oil
- ½ Tbsp honey
- 1 Tbsp minced garlic
- ½ tsp ginger paste (or use ½ tsp ground ginger)
- ½ tsp salt
- ¼ tsp pepper
- 3 (6-oz) salmon fillets
- ½ Tbsp olive oil
Instructions
- Combine soy sauce, sesame oil, honey, garlic, ginger, salt, and pepper in a shallow dish or zip-top plastic bag. Add fish; turn to coat. Chill 5 minutes.
- Preheat grill or grill pan to medium-high heat. Place fish on a grill rack coated with olive oil. Grill, covered, 6 to 10 minutes or until fish flakes with a fork, turning once.
Side Dish Ingredients
- ½ (16-oz) pkg pineapple chunks
- ½ (10-oz) pkg mango chunks
- 1 small apple, chopped
- 2 Tbsp chopped fresh mint
- 1 tsp honey
- ¼ tsp ginger paste (or use ⅛ tsp ground ginger)
Side Dish Instructions
- Combine pineapple, mango, apple, and mint in a bowl.
- Microwave honey in a small microwavable bowl at HIGH 10 to 20 seconds or until pourable. Add ginger; stir well. Drizzle over fruit; toss.
