Sloppy Joe-Topped Mashed Potatoes
Lemon Broccoli
Ingredients
- 1 lb plant-based ground beef
- ½ green bell pepper, chopped
- ½ onion, chopped
- 2 cloves garlic, minced
- ½ (8-oz) can tomato sauce
- 6 Tbsp ketchup
- 1½ Tbsp brown sugar
- 1½ Tbsp chili powder
- ½ tsp ground cumin
- 1 (24-oz) pkg refrigerated mashed potatoes
- ¾ cup shredded Cheddar cheese
Instructions
- Cook plant-based beef in a large skillet over medium heat 8 minutes or until browned and crumbly; drain well. Transfer to a 3- to 4-quart slow cooker.
- Stir in bell pepper, onion, garlic, tomato sauce, ketchup, sugar, chili powder, and cumin.
- Cover and cook on LOW 8 to 10 hours. Reserve 1½ cups plant-based beef mixture for Sloppy Joe Pizza recipe.
- Heat potatoes according to package directions; divide among 3 plates.
- Spoon remaining plant-based beef mixture over potatoes; sprinkle with cheese.
Side Dish Ingredients
- 1 Tbsp olive oil
- ½ lb broccoli, cut into florets
- ¼ cup water
- ½ tsp lemon zest
- 1 Tbsp lemon juice
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Cook broccoli and water, covered, in hot oil in a large skillet over medium-high heat 3 minutes.
- Uncover and cook until broccoli is crisp-tender; stir in lemon zest, lemon juice, salt, and pepper.
