Grilled Flank Steak with Dill Chimichurri

Ingredients

  • 1 (2-lb) flank steak
  • ½ cup plus 2 Tbsp olive oil, divided
  • ½ cup packed fresh parsley leaves
  • ¼ cup fresh dill sprigs
  • ¼ cup fresh cilantro leaves
  • 3 Tbsp lime juice
  • 3 garlic cloves, halved
  • ½ tsp salt
  • ⅛ tsp crushed red pepper

Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush steak with 2 Tbsp oil; season with salt and pepper.
  2. Grill steak, covered, 5 to 6 minutes per side or to desired doneness; let stand 10 minutes before thinly slicing across the grain.
  3. Meanwhile, process ½ cup oil, parsley, dill, cilantro, lime juice, garlic, salt, and pepper in a food processor or blender until combined. Spoon sauce over sliced steak.
