Jalapeño and Radish Slaw

Ingredients

  • ¼ cup lime juice
  • 2 Tbsp olive oil
  • 2 tsp honey
  • 2 (16-oz) pkg tricolor coleslaw mix
  • 6 radishes, thinly sliced 
  • ½ cup minced fresh cilantro
  • 3 jalapeño peppers, seeded and minced

Instructions

  1. Whisk together lime juice, oil and honey in a large bowl; add coleslaw mix, radishes, cilantro and jalapeño; toss. Season with salt and pepper to taste.
  2. Serve immediately, or cover and refrigerate up to 1 day.
