Tres Leches Cake

Ingredients

  • 2 cups butter, softened
  • 2 cups granulated sugar, divided
  • 1 cup packed brown sugar
  • 6 large eggs
  • 1 (14-oz) can sweetened condensed milk
  • ½ cup milk
  • 1 tsp vanilla extract
  • 4 cups all-purpose flour
  • ¼ cup water
  • 1 cup heavy cream
  • 1 (16-oz) carton frozen whipped topping, thawed

Instructions

  1. Preheat oven to 300°F. Beat butter, 1 cup granulated sugar and brown sugar in a large bowl with a mixer at medium speed until fluffy. Add eggs, one at a time, beating well after each addition.
  2. Whisk together condensed milk, milk and vanilla in a bowl. Gradually add flour to butter mixture, alternately with milk mixture, beginning and ending with flour, beating just until combined after each addition.
  3. Pour batter into a greased 13-x 9-inch pan. Bake 1 hour and 20 minutes or until a wooden pick inserted in center comes out clean.
  4. Using a wooden skewer, poke holes in warm cake at ½-inch intervals.
  5. Combine water and 1 cup sugar in a small saucepan. Bring to a boil over medium-high heat, stirring until sugar dissolves. Gradually stir in cream.
  6. Slowly pour cream mixture over top of cake. Let cake cool completely in pan.
  7. Spread whipped topping over cake before serving. Store in refrigerator.
