Thai Chicken-Mango Salad

Ingredients

  • 2 mangos, diced
  • 6 Tbsp unsweetened light coconut milk
  • 2 Tbsp fresh lime juice
  • ¾ tsp curry powder
  • ¼ tsp salt
  • Pinch of cayenne pepper
  • 2 cups shredded rotisserie chicken
  • 1 red bell pepper, chopped
  • ½ cup cashews, chopped
  • 1 (5-oz) pkg baby kale
  • 2 Tbsp chopped fresh basil

Instructions

  1. Process mangos, coconut milk, lime juice, curry powder, salt, and cayenne pepper in a blender or food processor, scraping sides as needed.
  2. Combine chicken, bell pepper, cashews, and mango mixture.
  3. Divide kale among 4 serving bowls; top with chicken mixture. Sprinkle with basil.
