Thai Chicken-Mango Salad
Ingredients
- 2 mangos, diced
- 6 Tbsp unsweetened light coconut milk
- 2 Tbsp fresh lime juice
- ¾ tsp curry powder
- ¼ tsp salt
- Pinch of cayenne pepper
- 2 cups shredded rotisserie chicken
- 1 red bell pepper, chopped
- ½ cup cashews, chopped
- 1 (5-oz) pkg baby kale
- 2 Tbsp chopped fresh basil
Instructions
- Process mangos, coconut milk, lime juice, curry powder, salt, and cayenne pepper in a blender or food processor, scraping sides as needed.
- Combine chicken, bell pepper, cashews, and mango mixture.
- Divide kale among 4 serving bowls; top with chicken mixture. Sprinkle with basil.
