Chipotle Turkey Bowls
Creamy Cilantro-Lime "Rice"
Ingredients
- 1 lb ground turkey
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 Tbsp olive oil
- 2 chipotle peppers in adobo sauce, chopped
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp salt
- ¼ tsp pepper
- 2 avocados, sliced
- ¼ cup chopped fresh cilantro
Instructions
- Cook turkey, bell pepper, and onion in hot oil in a large skillet over medium-high heat 8 to 10 minutes or turkey is done and vegetables are tender.
- Stir in chipotle peppers, chili powder, cumin, salt, and pepper. Cook 2 minutes or until thoroughly heated. Serve turkey mixture over Creamy Cilantro-Lime "Rice" recipe. Top with avocados and cilantro.
Side Dish Ingredients
- 1 (20-oz) pkg frozen cauliflower rice
- ½ cup sour cream
- ¼ cup chopped fresh cilantro
- 1 Tbsp lime juice
Side Dish Instructions
- Cook cauliflower according to package directions.Transfer to a bowl.
- Stir sour cream, cilantro, and lime juice into hot cauliflower rice.
