Chipotle Turkey Bowls

Ingredients

  • 1 lb ground turkey
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 Tbsp olive oil
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 avocados, sliced
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook turkey, bell pepper, and onion in hot oil in a large skillet over medium-high heat 8 to 10 minutes or turkey is done and vegetables are tender.
  2. Stir in chipotle peppers, chili powder, cumin, salt, and pepper. Cook 2 minutes or until thoroughly heated. Serve turkey mixture over Creamy Cilantro-Lime "Rice" recipe. Top with avocados and cilantro.

Side Dish Ingredients

  • 1 (20-oz) pkg frozen cauliflower rice
  • ½ cup sour cream
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp lime juice

Side Dish Instructions

  1. Cook cauliflower according to package directions.Transfer to a bowl.
  2. Stir sour cream, cilantro, and lime juice into hot cauliflower rice.
