Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 2 tsp minced garlic
  • 1 Tbsp olive oil
  • 1 Tbsp ground cumin
  • ½ tsp salt
  • 1 cup refrigerated salsa
  • 1 cup shredded sharp Cheddar cheese
  • 3 cups shredded iceberg lettuce
  • 2 Roma tomatoes, chopped
  • ½ cup sour cream
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat broiler. Cook beef, onion, bell pepper, and garlic in hot oil in a large skillet over medium heat until meat is browned and crumbly and vegetables are tender.
  2. Stir in cumin, salt, and salsa. Cook 2 minutes or until thoroughly heated.
  3. Spoon mixture into an 8-inch broiler-proof baking dish. Sprinkle with cheese. Broil 3 to 4 minutes or until cheese melts.
  4. Top with lettuce, tomatoes, sour cream, and cilantro just before serving.
