Barbecue Pork Salad

Ingredients

  • ½ cup unsweetened barbecue sauce
  • ½ cup Ranch dressing
  • 1 (1-lb) pork tenderloin, trimmed
  • 4 tsp barbecue seasoning
  • 1 Tbsp olive oil
  • 1 (10-oz) pkg chopped romaine lettuce
  • 2 Roma tomatoes, sliced
  • ½ cucumber, cut into half-moons
  • 1 cup shredded Cheddar cheese
  • Chopped green onions (optional)

Instructions

  1. Stir together barbecue sauce and Ranch dressing; set aside.
  2. Meanwhile, cut pork into 1-inch cubes; sprinkle with seasoning. Cook pork in hot oil in a large nonstick skillet over medium-high heat 10 minutes or until done.
  3. Divide lettuce among 4 plates. Top with pork, tomatoes, cucumber, and cheese. Serve with dressing, and top with onions, if desired.
