Barbecue Pork Salad
Ingredients
- ½ cup unsweetened barbecue sauce
- ½ cup Ranch dressing
- 1 (1-lb) pork tenderloin, trimmed
- 4 tsp barbecue seasoning
- 1 Tbsp olive oil
- 1 (10-oz) pkg chopped romaine lettuce
- 2 Roma tomatoes, sliced
- ½ cucumber, cut into half-moons
- 1 cup shredded Cheddar cheese
- Chopped green onions (optional)
Instructions
- Stir together barbecue sauce and Ranch dressing; set aside.
- Meanwhile, cut pork into 1-inch cubes; sprinkle with seasoning. Cook pork in hot oil in a large nonstick skillet over medium-high heat 10 minutes or until done.
- Divide lettuce among 4 plates. Top with pork, tomatoes, cucumber, and cheese. Serve with dressing, and top with onions, if desired.
