Oven-Fried Drumsticks

Baby Spinach and Broccoli Salad

Ingredients

  • 3 lb chicken drumsticks
  • 2 Tbsp Dijon mustard
  • 1 Tbsp mayonnaise
  • 1 Tbsp water
  • ½ cup almond flour
  • ⅓ cup freshly grated Parmesan cheese
  • ¼ tsp cayenne pepper
  • 1 tsp garlic salt
  • 2 Tbsp butter, melted

Instructions

  1. Preheat oven to 450°F. Pat dry chicken with paper towels.
  2. Combine mustard, mayonnaise, and water. Toss with chicken until coated.
  3. Stir together almond flour, cheese, cayenne pepper, and garlic salt. Dredge chicken in almond flour mixture, pressing to coat. Place chicken on a large rimmed baking sheet coated with cooking spray.
  4. Bake 35 to 40 minutes or until chicken is done, drizzling with melted butter halfway through baking.

  • ⅓ cup sliced almonds
  • 4 cups baby spinach
  • 2 cups broccoli florets
  • ¼ cup thinly sliced red onion
  • 6 Tbsp olive-oil mayonnaise
  • 3 Tbsp lemon juice
  • 3 Tbsp extra virgin olive oil
  • ½ tsp garlic salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toast nuts in a dry skillet over low heat until fragrant and browned. Cool.
  2. Combine spinach, broccoli, nuts, and onion in a large bowl. Stir together mayonnaise, lemon juice, oil, garlic salt, and pepper; toss with salad.
