Oven-Fried Drumsticks
Baby Spinach and Broccoli SaladIngredients
- 3 lb chicken drumsticks
- 2 Tbsp Dijon mustard
- 1 Tbsp mayonnaise
- 1 Tbsp water
- ½ cup almond flour
- ⅓ cup freshly grated Parmesan cheese
- ¼ tsp cayenne pepper
- 1 tsp garlic salt
- 2 Tbsp butter, melted
Instructions
- Preheat oven to 450°F. Pat dry chicken with paper towels.
- Combine mustard, mayonnaise, and water. Toss with chicken until coated.
- Stir together almond flour, cheese, cayenne pepper, and garlic salt. Dredge chicken in almond flour mixture, pressing to coat. Place chicken on a large rimmed baking sheet coated with cooking spray.
- Bake 35 to 40 minutes or until chicken is done, drizzling with melted butter halfway through baking.

- ⅓ cup sliced almonds
- 4 cups baby spinach
- 2 cups broccoli florets
- ¼ cup thinly sliced red onion
- 6 Tbsp olive-oil mayonnaise
- 3 Tbsp lemon juice
- 3 Tbsp extra virgin olive oil
- ½ tsp garlic salt
- ¼ tsp pepper
Side Dish Instructions
- Toast nuts in a dry skillet over low heat until fragrant and browned. Cool.
- Combine spinach, broccoli, nuts, and onion in a large bowl. Stir together mayonnaise, lemon juice, oil, garlic salt, and pepper; toss with salad.
