Salisbury Steak with Mushroom Gravy
Smashed Garlic Potatoes and Roasted Broccoli
Ingredients
- ¾ lb ground round
- ¼ cup panko breadcrumbs (preferably whole wheat)
- 1½ Tbsp Worcestershire sauce, divided
- ½ Tbsp Dijon mustard
- ½ Tbsp tomato paste
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 Tbsp olive oil
- ½ onion, halved and sliced
- 1 (8-oz) pkg sliced mushrooms
- 1¼ cups low-sodium beef broth
- ½ tsp cornstarch
Instructions
- Combine beef, panko, 1 Tbsp Worcestershire sauce, mustard, tomato paste, and ⅛ tsp each salt and pepper. Shape mixture into 3 patties.
- Cook patties in hot oil in a large nonstick skillet over medium heat 2 minutes per side or until browned. Remove from skillet; keep warm.
- Add onion and mushrooms to skillet; sauté 6 to 7 minutes or until browned and tender.
- Whisk together broth, ½ Tbsp Worcestershire, and cornstarch; add to onion mixture with ⅛ tsp each salt and pepper.
- Return patties to skillet; cover and cook 5 minutes or until done.
Side Dish Ingredients
- ¾ lb red potatoes, cut into chunks
- 1 clove garlic, sliced
- ¼ cup low-sodium chicken broth
- 2 Tbsp olive oil, divided
- ½ tsp salt, divided
- ½ tsp pepper, divided
- ¾ lb broccoli crowns, cut into florets
Side Dish Instructions
- Preheat oven to 400°F. Bring potatoes, garlic, and water to cover to a boil in a medium saucepan; reduce heat, and simmer 15 minutes or until tender. Drain; return potatoes and garlic to saucepan.
- Add broth, 1 Tbsp oil, and ¼ tsp each salt and pepper to potatoes; mash with a potato masher to desired consistency.
- Meanwhile, toss broccoli with 1 Tbsp oil and ¼ tsp each salt and pepper on a greased rimmed baking sheet; spread in a single layer.
- Roast 15 to 20 minutes or until browned and tender.
