Grilled Chicken and Avocado Lettuce Wraps
Buffalo Cauliflower
Ingredients
- 1 avocado, cubed
- ½ cup quartered grape tomatoes
- ¼ cup chopped red onion
- 2 tsp lemon juice
- ¼ tsp salt, divided
- 1 (8-oz) boneless, skinless chicken breast, halved lengthwise
- ½ Tbsp olive oil
- ⅛ tsp pepper
- 4 Bibb lettuce leaves
Instructions
- Preheat grill to medium-high heat. Toss together avocado, tomatoes, onion, lemon juice, and ⅛ tsp salt in a bowl.
- Pound chicken to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; toss with oil, and sprinkle with ⅛ tsp salt and pepper.
- Grill chicken, covered, 4 minutes per side or until done. Thinly slice chicken.
- Arrange chicken on lettuce leaves; top with avocado mixture.

- 1 (12-oz) pkg cauliflower florets
- 1 Tbsp olive oil
- 2 Tbsp hot sauce
- 2 Tbsp butter
- 2 tsp lemon juice
Side Dish Instructions
- Preheat oven to 400°F. Toss together cauliflower and oil; spread in a single layer on a rimmed baking sheet. Bake 20 to 25 minutes or until tender.
- Meanwhile, microwave hot sauce, butter, and lemon juice in a custard cup or microwave-safe bowl on HIGH 30 seconds or until butter melts. Gently toss together cauliflower and sauce.
- Bake 5 to 7 minutes longer or until edges of cauliflower are browned.
