Cuban Citrus Chicken Thighs

Ingredients

  • 1 lb bone-in chicken thighs
  • ¼ cup fresh orange juice
  • ¼ cup fresh lime juice
  • 1 clove garlic, minced
  • ½ tsp ground cumin
  • ¼ tsp dried oregano
  • ⅛ tsp cayenne pepper
  • ⅛ tsp salt

Instructions

  1. Use paper towels to grip and remove skin from chicken. Combine orange juice, lime juice, garlic, cumin, oregano, and cayenne pepper in a shallow bowl or zip-top plastic freezer bag; add chicken. Cover or seal, and let stand 30 minutes.
  2. Preheat grill to medium heat. Remove chicken from marinade; discard marinade. Season chicken with salt.
  3. Grill chicken, covered, on a grill rack rubbed with olive oil 30 to 35 minutes or until done, turning occasionally.

Side Dish Ingredients

  • 2 yellow squash, cut lengthwise into ½-inch-thick planks
  • 1 red onion, cut into ½-inch-thick rounds
  • 1 Tbsp avocado oil
  • 1 clove garlic, minced
  • ½ tsp lemon-pepper seasoning
  • ½ tsp salt
  • 1 cup grape tomatoes, halved

Side Dish Instructions

  1. Preheat grill to medium heat. Toss together squash, onion, oil, garlic, seasoning, and salt in a large bowl.
  2. Grill, covered, 4 to 6 minutes per side or until vegetables are tender. Coarsely chop vegetables, and stir in tomatoes.
