Honey Mustard Baked Chicken Breasts
Bacon-Apple-Arugula Salad
Ingredients
- ¼ cup Dijon mustard
- 1½ Tbsp avocado oil
- 1 Tbsp raw honey
- 2 boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 1 green onion, chopped
Instructions
- Combine mustard, oil, honey, and chicken in a large zip-top plastic bag. Seal and turn to coat; chill overnight.
- Preheat oven to 350°F. Remove chicken from marinade; discard marinade. Place chicken on a rimmed baking sheet. Sprinkle with salt and pepper.
- Bake 35 minutes or until done. Sprinkle with onions before serving.

- 1 (5-oz) pkg baby arugula
- 1 apple, finely chopped
- 4 slices uncured bacon, cooked and crumbled
- 2 Tbsp extra virgin olive oil
- 2 tsp balsamic vinegar
- ½ tsp raw honey
- ⅛ tsp garlic powder
- ⅛ tsp kosher salt
Side Dish Instructions
- Toss together arugula, apple, and bacon in a bowl.
- Whisk together oil, vinegar, honey, garlic powder, and salt. Drizzle dressing over salad; toss.
