Honey Mustard Baked Chicken Breasts

Ingredients

  • ¼ cup Dijon mustard
  • 1½ Tbsp avocado oil
  • 1 Tbsp raw honey
  • 2 boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 green onion, chopped

Instructions

  1. Combine mustard, oil, honey, and chicken in a large zip-top plastic bag. Seal and turn to coat; chill overnight.
  2. Preheat oven to 350°F. Remove chicken from marinade; discard marinade. Place chicken on a rimmed baking sheet. Sprinkle with salt and pepper.
  3. Bake 35 minutes or until done. Sprinkle with onions before serving.

  • 1 (5-oz) pkg baby arugula
  • 1 apple, finely chopped
  • 4 slices uncured bacon, cooked and crumbled
  • 2 Tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • ½ tsp raw honey
  • ⅛ tsp garlic powder
  • ⅛ tsp kosher salt

Side Dish Instructions

  1. Toss together arugula, apple, and bacon in a bowl.
  2. Whisk together oil, vinegar, honey, garlic powder, and salt. Drizzle dressing over salad; toss.
