Creamy Cajun Pasta

Ingredients

  • 1 (16-oz) pkg penne pasta
  • 1 (14-oz) pkg andouille smoked sausage, sliced
  • 1 onion, chopped 
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 2 (14.5-oz) cans diced tomatoes
  • 6 oz cream cheese
  • ¾ tsp Cajun seasoning
  • ⅓ cup chopped fresh parsley (optional)

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook sausage, onion, and garlic in hot oil in a large skillet 6 to 8 minutes or until sausage is browned and onion is tender.
  3. Stir in tomatoes, cream cheese, and seasoning; cook 5 minutes or until cheese melts. Stir in pasta, tossing to coat. Sprinkle with parsley, if desired.

  • 2 (12-oz) pkg frozen thin green beans
  • 2 Tbsp minced garlic
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook bean according to package directions. Toss with garlic, salt, and pepper.
