Pork Chops with Mushroom Gravy
Orange BroccoliIngredients
- 2 (1-inch-thick) bone-in pork chops
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ cup chopped onion
- 1 clove garlic, minced
- ½ cup low-sodium chicken broth
- 2 tsp olive oil
- 1 tsp low-sodium soy sauce
- 1 tsp Dijon mustard
- 1 (8-oz) pkg sliced mushrooms
- 2 tsp cornstarch
- 1 Tbsp cold water
Instructions
- Sprinkle pork with salt and pepper, and place in a 3- to 4-quart slow cooker.
- Stir together onion, garlic, broth, oil, soy sauce, and mustard; pour over pork. Top with mushrooms.
- Cover and cook on LOW 7 hours or until pork is tender. Remove pork, cover with foil. Whisk together cornstarch and water; add to cooker. Increase heat to HIGH, cover and cook 15 minutes or until gravy is thickened. Serve mushroom gravy over pork.
Side Dish Ingredients
- 1 (12-oz) pkg broccoli florets
- 1 Tbsp olive oil
- ½ tsp orange zest
- 1 Tbsp fresh orange juice
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook broccoli in hot oil in a large skillet over medium-high heat 6 minutes or until crisp-tender. Stir in orange zest, orange juice, salt, and pepper.
