Mixed-Grain Veggie Bowls

Ingredients

  • ½ red onion, sliced
  • 2 bell peppers (any colors), sliced
  • 1½ Tbsp canola oil
  • 1 (8-oz) pkg sliced mushrooms
  • 1 (8.5-oz) pkg microwaveable quinoa and brown rice with flax seeds
  • ⅔ cup frozen shelled edamame
  • 2½ Tbsp low-sodium soy sauce
  • 1½ tsp agave nectar
  • 1½ tsp apple cider vinegar
  • ⅛ tsp crushed red pepper
  • 6 Tbsp chopped roasted, salted peanuts

Instructions

  1. Cook onion and bell pepper in hot oil in a large skillet over medium-high heat 6 minutes or until just browned. Add mushrooms; cook 5 minutes or until mushrooms are tender.
  2. Meanwhile, microwave quinoa mix and edamame according to package directions. Whisk together soy sauce, agave, vinegar, and crushed red pepper.
  3. Divide quinoa mix, mushroom mixture, and edamame among 3 serving bowls. Sprinkle with nuts and drizzle with soy mixture.
