Mixed-Grain Veggie Bowls
Ingredients
- ½ red onion, sliced
- 2 bell peppers (any colors), sliced
- 1½ Tbsp canola oil
- 1 (8-oz) pkg sliced mushrooms
- 1 (8.5-oz) pkg microwaveable quinoa and brown rice with flax seeds
- ⅔ cup frozen shelled edamame
- 2½ Tbsp low-sodium soy sauce
- 1½ tsp agave nectar
- 1½ tsp apple cider vinegar
- ⅛ tsp crushed red pepper
- 6 Tbsp chopped roasted, salted peanuts
Instructions
- Cook onion and bell pepper in hot oil in a large skillet over medium-high heat 6 minutes or until just browned. Add mushrooms; cook 5 minutes or until mushrooms are tender.
- Meanwhile, microwave quinoa mix and edamame according to package directions. Whisk together soy sauce, agave, vinegar, and crushed red pepper.
- Divide quinoa mix, mushroom mixture, and edamame among 3 serving bowls. Sprinkle with nuts and drizzle with soy mixture.
