Easy Taco Bowls

Ingredients

  • ¾ lb plant-based ground beef 
  • ½ (1-oz) envelope low-sodium taco seasoning mix
  • 1½ Tbsp water
  • 1 (10-oz) pkg frozen riced cauliflower 
  • 2 green onions, chopped
  • 2 cups chopped romaine lettuce
  • ¾ cup shredded reduced-fat Cheddar cheese
  • ⅓ cup fresh salsa
  • 1 avocado, sliced 

Instructions

  1. Cook plant-based beef in a large nonstick skillet over medium heat 8 minutes or until browned. Add taco seasoning and water, stirring to combine. Cook 2 minutes or until slightly thickened.
  2. Cook cauliflower rice according to package directions. Stir onions into cauliflower rice.
  3. Arrange lettuce in 3 bowls. Top with cauliflower mixture, beef mixture, cheese, salsa, and avocado.
