Easy Taco Bowls
Ingredients
- ¾ lb plant-based ground beef
- ½ (1-oz) envelope low-sodium taco seasoning mix
- 1½ Tbsp water
- 1 (10-oz) pkg frozen riced cauliflower
- 2 green onions, chopped
- 2 cups chopped romaine lettuce
- ¾ cup shredded reduced-fat Cheddar cheese
- ⅓ cup fresh salsa
- 1 avocado, sliced
Instructions
- Cook plant-based beef in a large nonstick skillet over medium heat 8 minutes or until browned. Add taco seasoning and water, stirring to combine. Cook 2 minutes or until slightly thickened.
- Cook cauliflower rice according to package directions. Stir onions into cauliflower rice.
- Arrange lettuce in 3 bowls. Top with cauliflower mixture, beef mixture, cheese, salsa, and avocado.
