Rosemary-Garlic Chicken Thighs

Ingredients

  • ¾ lb boneless, skinless chicken thighs
  • 2 tsp olive oil, divided
  • 1 tsp chopped fresh rosemary
  • ½ tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Rub chicken with 1 tsp oil; sprinkle with rosemary, garlic powder, and salt.
  2. Cook chicken in 1 tsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.

Side Dish Ingredients

  • ½ lb radishes, halved
  • 2 tsp olive oil
  • 2 tsp minced garlic
  • 1 Tbsp chopped fresh rosemary
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ⅓ cup Israeli (pearl) couscous
  • 3 Tbsp chopped fresh mint
  • 2 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together radishes, oil, garlic, rosemary, salt, and pepper on a rimmed baking sheet; spread in a single layer. Roast 20 minutes or until golden.
  2. Meanwhile, cook couscous according to package directions. Stir in mint and vinaigrette.
