Ingredients

  • ¼ cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • ½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • 2 avocados, sliced
  • 1 red bell pepper, chopped
  • ½ cup thinly sliced red onion
  • ¾ cup crumbled feta cheese

Instructions

  1. Whisk together oil, lemon juice, cumin, salt, and pepper in a large bowl. Add chickpeas, avocados, bell pepper, and onion; toss. Top with cheese.
