Ground Beef Lettuce Wraps

Ingredients

  • 1½ lb ground beef (or use ground turkey)
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup creamy peanut butter
  • 3 Tbsp soy sauce
  • 2 Tbsp rice vinegar
  • 1 Tbsp minced garlic
  • 1 small head leaf lettuce, leaves separated
  • 1 lime, cut into wedges

Instructions

  1. Cook beef, salt, and pepper in a large skillet over medium-high heat 10 minutes or until beef is browned and crumbly; keep warm.
  2. Whisk together peanut butter, soy sauce, vinegar, and garlic.
  3. Divide beef among desired number of lettuce leaves; drizzle with peanut sauce. Serve with lime wedges. Top with Carrot-Avocado Salad recipe, or serve it on the side.

Side Dish Ingredients

  • 3 Tbsp lime juice
  • 2 Tbsp extra virgin olive oil
  • 1 tsp salt
  • ¾ cup shredded carrots
  • 1 jicama, peeled and grated
  • 2 avocados, chopped

Side Dish Instructions

  1. Whisk together lime juice, oil, and salt in a bowl. Stir in carrots and jicama. Chill until ready to serve.
  2. Stir in avocados just before serving.
