Ground Beef Lettuce Wraps

Ingredients
- 1½ lb ground beef (or use ground turkey)
- 1 tsp salt
- ½ tsp pepper
- ½ cup creamy peanut butter
- 3 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 1 Tbsp minced garlic
- 1 small head leaf lettuce, leaves separated
- 1 lime, cut into wedges
Instructions
- Cook beef, salt, and pepper in a large skillet over medium-high heat 10 minutes or until beef is browned and crumbly; keep warm.
- Whisk together peanut butter, soy sauce, vinegar, and garlic.
- Divide beef among desired number of lettuce leaves; drizzle with peanut sauce. Serve with lime wedges. Top with Carrot-Avocado Salad recipe, or serve it on the side.
Side Dish Ingredients
- 3 Tbsp lime juice
- 2 Tbsp extra virgin olive oil
- 1 tsp salt
- ¾ cup shredded carrots
- 1 jicama, peeled and grated
- 2 avocados, chopped
Side Dish Instructions
- Whisk together lime juice, oil, and salt in a bowl. Stir in carrots and jicama. Chill until ready to serve.
- Stir in avocados just before serving.
