Barbecue Chicken Baguettes

Ingredients
- 2 lb breaded deli chicken tenders
- 6 demi baguettes, halved lengthwise
- ½ cup garlic butter (or use garlic and herb butter spread)
- ¾ cup barbecue sauce
- 1 (8-oz) pkg sliced mozzarella cheese
Instructions
- Preheat oven to 425°F. Arrange chicken tenders on a foil-lined baking sheet. Place baguette halves, cut sides, up on a second baking sheet; spread garlic butter on bread.
- Bake chicken and bread 10 to 12 minutes or until chicken is thoroughly heated and bread is toasted.
- Arrange chicken on bottom baguettes; drizzle with barbecue sauce. Top with cheese, and cover with bread tops. Return to oven, and bake 5 minutes longer or until cheese is melted.
Side Dish Ingredients
- 2 (10-oz) pkg frozen shredded carrots and broccoli florets
- 2 Tbsp butter
- 2 tsp lemon-pepper seasoning
Side Dish Instructions
- Steam vegetables in microwave according to package directions; drain and toss with butter and seasoning.
