Mustard Roasted Chicken and Potatoes

Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • 1½ Tbsp olive oil
  • ¾ lb small red potatoes, cut in half
  • 1½ Tbsp Dijon mustard
  • 2 cloves garlic, minced
  • ½ Tbsp chopped fresh rosemary

Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a large rimmed baking sheet. Arrange in a singe layer and lightly season with salt and pepper.
  2. Bake 20 to 25 minutes or until chicken is done and potatoes are tender.
