Cheesy Chicken and Corn Taquitos

Ingredients

  • ½ lb boneless, skinless chicken breasts (see Note)
  • ⅛ tsp pepper
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • 2 burrito-size flour tortillas (preferably whole wheat)
  • ½ cup corn kernels (1 ear corn)
  • ½ cup shredded Monterey Jack cheese
  • 1 Tbsp olive oil
  • ⅓ cup sour cream
  • ½ cup fresh salsa

Instructions

  1. Preheat oven to 350°F. Sprinkle chicken with pepper, chili powder, and cumin in a lightly greased baking dish. Bake 25 minutes or until done. Cool slightly; shred chicken.
  2. Place tortillas on a clean surface; top one third of each tortilla with chicken, corn, and cheese. Roll up into tight cylinders.
  3. Cook tortillas in hot oil 2 to 3 minutes per side or until tortillas are browned and cheese is melted.
  4. Serve with sour cream and salsa.

  • 1 avocado, chopped
  • 1 Tbsp fresh lime juice

Side Dish Instructions

  1. Toss together avocados and lime juice in a bowl.
