Zucchini-Tomato Frittata

Ingredients

  • 1½ Tbsp olive oil, divided
  • ½ zucchini, thinly sliced
  • ½ pint organic grape tomatoes, halved
  • 4 large eggs, lightly beaten
  • 1 green onion, chopped
  • 1 tsp Italian seasoning
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 400°F. Grease a 8-inch round baking dish or ovenproof skillet with ½ Tbsp oil.
  2. Cook zucchini and tomatoes in 1 Tbsp hot oil in a large nonstick skillet over medium heat 4 minutes or until tender. Spread zucchini and tomatoes in baking dish.
  3. Whisk together eggs, onions, seasoning, garlic, salt, and pepper in a large bowl. Pour mixture over zucchini in dish.
  4. Bake 20 to 25 minutes or until center is set.

Side Dish Ingredients

  • ⅓ cup chopped pecans
  • 1½ cups mixed berries (such as strawberries, blueberries, and raspberries)
  • 2 tsp chopped fresh mint
  • 1 tsp fresh lemon juice
  • ¾ cup plain Greek yogurt
  • 2 tsp honey

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium heat until fragrant. Cool.
  2. Combine berries, mint, and lemon juice in a medium bowl; stir together yogurt and honey in a separate bowl.
  3. Layer half of berries into 2 glasses or bowls; top with half of yogurt mixture and half of nuts.
  4. Repeat with remaining berries, yogurt, and nuts.
