Zucchini-Tomato Frittata
Mixed Berry ParfaitsIngredients
- 1½ Tbsp olive oil, divided
- ½ zucchini, thinly sliced
- ½ pint organic grape tomatoes, halved
- 4 large eggs, lightly beaten
- 1 green onion, chopped
- 1 tsp Italian seasoning
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 400°F. Grease a 8-inch round baking dish or ovenproof skillet with ½ Tbsp oil.
- Cook zucchini and tomatoes in 1 Tbsp hot oil in a large nonstick skillet over medium heat 4 minutes or until tender. Spread zucchini and tomatoes in baking dish.
- Whisk together eggs, onions, seasoning, garlic, salt, and pepper in a large bowl. Pour mixture over zucchini in dish.
- Bake 20 to 25 minutes or until center is set.
Side Dish Ingredients
- ⅓ cup chopped pecans
- 1½ cups mixed berries (such as strawberries, blueberries, and raspberries)
- 2 tsp chopped fresh mint
- 1 tsp fresh lemon juice
- ¾ cup plain Greek yogurt
- 2 tsp honey
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat until fragrant. Cool.
- Combine berries, mint, and lemon juice in a medium bowl; stir together yogurt and honey in a separate bowl.
- Layer half of berries into 2 glasses or bowls; top with half of yogurt mixture and half of nuts.
- Repeat with remaining berries, yogurt, and nuts.
