Creamy Dijon-Lime Chicken Thighs

Ingredients

  • 8 (3-oz) boneless, skin-on chicken thighs (or use boneless, skinless chicken breasts or tenderloins)
  • ¼ cup Dijon mustard
  • 2 Tbsp mayonnaise
  • 1 clove garlic, minced
  • 1 Tbsp lime juice
  • 1 tsp lime zest
  • ½ tsp kosher salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 400°F. Place chicken in an 11-x 7-inch baking dish coated with cooking spray.
  2. Combine mustard, mayonnaise, garlic, lime juice, lime zest, salt, and pepper in a small bowl. Pour over chicken. Toss.
  3. Bake 25 to 30 minutes or until chicken is done. Drizzle pan juices over chicken before serving.

  • 1 (16-oz) pkg frozen cauliflower florets
  • ½ cup crumbled goat cheese
  • 6 Tbsp heavy cream
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • ¼ cup chopped fresh cilantro

Side Dish Instructions

  1. Cook cauliflower in microwave according to package directions.
  2. Place in a large bowl; add cheese and cream. Blend with a handheld mixer or mash with a fork. Stir in salt, pepper, and cilantro.
