Cheese Grits and Roasted Asparagus

Ingredients
- ½ (10-oz) pkg frozen seasoning blend (diced onion, bell peppers, and celery)
- ½ lb peeled and deveined, large raw shrimp
- 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
- 1½ tsp Cajun seasoning
Instructions
- Cook seasoning blend in a large, deep skillet coated with cooking spray over medium-high heat 6 minutes.
- Add shrimp, tomatoes, and Cajun seasoning; simmer 6 to 8 minutes or until shrimp turn pink and sauce is thickened.

- ½ lb asparagus, trimmed
- 2 tsp olive oil
- ⅛ tsp salt, divided
- ⅛ tsp pepper, divided
- ½ cup quick-cooking grits
- ½ cup shredded Cheddar cheese
- ½ Tbsp butter
Side Dish Instructions
- Preheat oven to 450°F. Toss together asparagus, oil, and a dash each salt and pepper on a rimmed baking sheet; spread in a single layer.
- Roast 10 to 12 minutes or until tender and tips are browned.
- Meanwhile, cook grits according to package directions; stir in cheese, butter, and a dash each salt and pepper.
