Caesar Chicken
Summery Romaine Salad
Ingredients
- ¾ lb boneless, skinless chicken thighs
- ⅓ cup creamy Caesar dressing
- ⅓ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 400°F. Place chicken in a greased baking dish; drizzle with dressing.
- Bake 15 minutes. Sprinkle with cheese, and bake 5 minutes longer or until chicken is done and cheese melts.
Side Dish Ingredients
- 1 slice center cut bacon, chopped
- 1 ear corn
- 2 cups chopped romaine lettuce
- 1 tomato, chopped
- 2 Tbsp olive oil vinaigrette
Side Dish Instructions
- Cook bacon in a skillet over medium-high heat 6 minutes or until crisp. Drain, reserving drippings in skillet.
- Cut corn kernels from cob; discard cob. Add corn to same skillet; cook 5 minutes or until lightly browned.
- Toss together romaine, tomatoes, bacon, corn, and vinaigrette in a medium bowl.
