Caesar Chicken

Summery Romaine Salad

Ingredients

  • ¾ lb boneless, skinless chicken thighs
  • ⅓ cup creamy Caesar dressing
  • ⅓ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Place chicken in a greased baking dish; drizzle with dressing.
  2. Bake 15 minutes. Sprinkle with cheese, and bake 5 minutes longer or until chicken is done and cheese melts.

Side Dish Ingredients

  • 1 slice center cut bacon, chopped
  • 1 ear corn
  • 2 cups chopped romaine lettuce
  • 1 tomato, chopped
  • 2 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Cook bacon in a skillet over medium-high heat 6 minutes or until crisp. Drain, reserving drippings in skillet.
  2. Cut corn kernels from cob; discard cob. Add corn to same skillet; cook 5 minutes or until lightly browned.
  3. Toss together romaine, tomatoes, bacon, corn, and vinaigrette in a medium bowl.
